Under this label, Felchlin create pure variety Grand Cru Couvertures made of noble-grade cocoa with the mark of origin, exclusively for the Chocolate Master.

Felchlin commitment is to select only the first choice of Grand Cru Cocoa beans from top locations and superior cocoa trees for traditional processing at the Felchlin factory in Schwyz. The costly and timeconsuming refining method (process of conching) up to 72 hours is applied, until the still hidden rich wealth of aromas fully unfolds.

To ensure this premium quality, all stages of processing – from roasting the beans to the final process of conching – are carried out with the greatest care and attention in our own production plants in Schwyz.

Technical properties

Due to the high content of cocoa butter, Felchlin Couvertures have a thin flowing viscosity, ideal for enrobing and molding.

Felchlin Swiss Charms are convenient. Just add water and cream. The finished cakes and desserts can be deep-frozen for several weeks or kept in the fridge for 1–2 days.

Felchlin dark Chocolate glaze is ready-to-use, with a long-lasting gloss. For fine results, warm up the Chocolate glaze in a water bath (bainmarie) or the microwave between 39°C and 42°C (102°F–107°F).

Felchlin pastry and confectionery shells are produced exclusively with butter. Available in two qualities: sweet for pastries and petits fours, neutral for savoury snacks. The shells
are supplied in sealed plastic carrier foils inclusive filling and pushing-out plates.

Technical properties
Felchlin pastry and confectionery shells are sprayed out with a very thin layer of vegetable fat to prevent the shells from becoming soft.
